I just bought this non-toxic stainless steel air fryer, so I was excited to make one of my favorite recipes! It is easy but soo delicious that I make it at least once a week!
GINGER SESAME AIR FRYER SALMON BOWL
INGREDIENTS
For the salmon
About 2 lbs salmon or 4 salmon filets, cubed
2 egg whites
1/4 cup Everything But The Bagel seasoning
3/4 panko breadcrumbs (gluten-free)
olive oil for drizzling
Spicy Mayo
1/3 cup healthy mayo; (I use primal kitchen)
1-2 tablespoons sriracha
Spicy Ginger Sauce
1/4 cup tamari coconut aminos or soy sauce
1-2 tablespoons honey
2 tablespoons sesame oil
1 tablespoon grated fresh ginger
For the bowl
2 small cucumbers, ribboned or sliced
2 large carrots, julienne
bell pepper, julienne
sprouted greens (or spinach works)
3-4 cups cooked rice
1/2 cup fresh cilantro chopped
Lemon for juice
INSTRUCTIONS
Preheat the air fryer according to the manufacturer's directions. Remove skin from salmon and pat dry with paper towels. Cut salmon into 1-inch pieces cubes.
In a bowl, put Everything But The Bagel seasoning and panko in it.
In a separate shallow bowl, place egg whites.
Lightly dip salmon into egg whites, letting excess drip off. Coat salmon in panko & seasoning mixture and shake off extra.
Place salmon nuggets inside air fryer and spritz with olive oil.
Air fry at 370ºF for 8-10 minutes.
Whisk the tamari, honey, 1 tsp sriracha, 2 tbsp sesame oil, and ginger in a small bowl to make the sauce. Microwave for 1 minute. Set aside for later.
For the spicy mayo, mix the remaining 1 tsp sriracha, 1 tsp sesame oil and the mayonnaise in a bowl.
Assemble the bowls with the rice, salmon bites, cucumbers, carrots, bell pepper, and greens. Drizzling the tamari ginger sauce over everything and adding a dollop of spicy mayo. Top with lemon juice! Enjoy!
