Copal is just so nice and sunny feeling - like a mini "staycation" from Seattle's cold and rain. As one of the best restaurants in Seattle's Pioneer Square, it is one of my favorite things to do is to have lunch here and take pictures. It is a Mexican spot in Pioneer Square that feels relaxed, inviting, and fresh. Good for casual drinks with friends or larger celebrations. It's awesome in the summertime when they can seat outside. Pro tip: Check out Margarita Monday's & cheese/squash quesadilla!

There are a few locations. The one in Pioneer Square is the largest and most gorgeous Instagrammable spot. The Scout is a contemporary northwest design and trendy setting in the lobby of the Thompson Hotel. This makes it one of the best Seattle restaurants and photo spots. There are so many things to do in Pike Place so I do recommend staying at their hotel: Thompson Hotel. The restaurant serves upscale farm-to-table eats & cocktails. Pro tip: Check out their rooftop bar for a gorgeous view and more photo ops!
