Hello, my friends! I know these are trying times, and my heart goes out to all those affected by the coronavirus and quarantine process. In light of the chaos, I wanted to shift gears to share some positive and relevant content to help you get through the days! Since a lot of us have some extra time on our hands, I thought it would be fun to share some of my favorite dishes and recipes with my mom. She is a professional chef so you guys are in for a treat!

For the first recipe, I wanted to share a homemade version of everyone's favorite take-out classic: pineapple fried rice! This easy, one-skillet recipe that’s ready in 20 minutes and better (and healthier) than takeout in my opinion. Your kids will love it too! It’s such an easy and healthy weeknight dinner you can whip up in no time and the leftovers are great for lunches.
Note: if you're not a pineapple person, just leave that ingredient out!
