The weather is cooling and I have been craving all the comforting creamy soups for dinner. This EASY (healthy) Thai Tomato Soup is one of Leif's favorites for dinner, served with a grilled cheese of course! And ready in 30 minutes! I finally got an immersion blender and I feel like it is already transforming my creamy soup recipes. Now I can make everything in one pot rather than having to transfer my soup ingredients from the pot to the blender and back which creates more dishes.

Thai Tomato Soup

Ingredients

  • 1 tablespoon oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, chopped
  • 2-inch knob fresh ginger, peeled and grated
  • 1 tablespoon Thai red curry paste
  • 1/4 teaspoon red pepper flakes (plus more for garnish)
  • 1 14oz can diced tomatoes
  • 1/2 cup chopped cilantro, plus additional leaves for topping
  • 2 cups vegetable broth
  • 1/2 tablespoon granulated sugar
  • 1 tablespoon fish sauce (or salt)
  • 1 15oz can coconut milk, shaken

Instructions

  1. Heat oil in a medium saucepan.  Sauté onions 10 minutes, stirring occasionally, until softened and golden.
  2. Add garlic, ginger, red curry paste, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes.
  3. Add diced tomatoes with their juice, chicken stock, chopped cilantro, sugar (or add sugar to taste), and fish sauce. Stir together and bring to a boil then reduce heat, partially cover with lid and simmer for 10 minutes.
  4. Reserve 1/4 cup of coconut milk, then add the rest of the coconut milk to the pot.
  5. Bring to a boil then reduce heat and simmer for 5 minutes.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, let the soup cool slightly and carefully transfer to a blender. Blend until smooth, allowing heat to escape through the vent at the top of the blender.
  7. Taste and add more fish sauce (or salt) as needed.
  8. Divide the thai tomato soup into bowls and top with leftover cilantro, coconut milk, and red pepper flakes.
